Roasted Chicken with Rosemary, Fennel Seed and Oregano - Nutrient Dense Paleo

Roasted Chicken with Rosemary, Fennel Seed and 

Serves: 4-5


Time Preparing: 15 minutes

Time Cooking:  120 to 150 minutes

Total Time: 135 to 165 minutes



- 1 whole organic free-range chicken

- 4 tablespoons ghee, melted

- 5 garlic cloves, minced

- 2 tablespoons organic fresh rosemary

- 2 tablespoons organic fennel seed

- 2 tablespoons organic oregano

- ½ tablespoon sea salt

- ¼ tablespoon freshly ground black pepper



Preheat oven to 350 degrees F

In a big bowl mix garlic, rosemary, fennel seed, oregano, sea salt, grounded pepper, and half of the ghee (2 tablespoons)

Rub mixture all over inside and outside the chicken

Place the chicken inside a roasting pan

Distribute all the remaining mixed ingredients over the chicken

Pour 2 tablespoons ghee on top of the chicken

Roast chicken until skin begins to brown, 120 to 150 minutes

Let rest 10 minutes before carving
