
Shrimp Stew with Chayote Squash

Ingredients
- 2 pounds wild shrimp, peeled and deveined
- 2 tablespoons olive oil or fat of your choice
- 1 cup onions, finely chopped
- 1 cup tomatoes, finely chopped
- 2 chayote squash, cut in small strips
- 8 garlic cloves, minced
- 2-3 tablespoons cilantro, finely chopped
- ¼ tablespoon fresh cayenne, finely chopped (optional)
- ½ tablespoon sea salt
Preparation
In a large pot heat the olive oil over medium heat until hot
Add chopped onions, stir occasionally, cook until lightly golden , 8-10 minutes
Add garlic, stir occasionally and cook until golden, 2-3 minutes
Add tomatoes, stir well and cover with the lid, cook for 5-10 minutes
Add the chayote squash, mix well into the tomato sauce, cook for 5 minutes
Add the shrimp, stir gently, bring to a boil
Add sea salt, and cayenne, stir gently, cook 2-3 minutes
Add cilantro, stir gently
Remove from the heat, transfer to a serving bowl
Serve with white rice, and your favorite salad
