Delicious Chicken Pie with Plantain Crust - Paleo/Keto Diet





Chicken Pie with Plantain Crust

Serves: 6-8

Total time: 120 minutes

Ingredients


For the filling


- 3-4 pounds grass-fed chicken breasts, cut into 1-inch cubes

- 2 cups heart of palms, sliced

- ½ cup black olives, pitted

- ½ cup green olives, pitted

- 2 cups organic onion, finely chopped

- 1 organic tomato, finely chopped

- 8-10 organic garlic cloves, minced

- ¼ teaspoon cayenne, finely chopped (optional)

- 3-4 tablespoons cilantro, finely chopped

- 2 tablespoons ghee or fat of choice

- ½ teaspoon sea salt

- Parmesan cheese, to sprinkle on the top (optional)


For the pie crust


8 green plantains, cooked and processed

Preparation


Step 1 (making the green plantains crust)


Place over medium heat a pressure cooker half filled with filtered water, bring to a boil

Wash well the plantains

Carefully, using a sharp knife, cut off a little bit of the stem and tip of the plantains

Add the plantains to the boiling water, cover pressure cooker

Allow pressure cooker to full pressure, cook for 8-10 minutes

Remove from heat

Do not open pressure cooker, let the pressure to release naturally

Carefully remove the plantains from the pressure cooker

Peel and slice the plantains

Turn on a food processor, and little by little add sliced plantains

Process until the plantains are smooth

Transfer the plantain dough to a large Pyrex

Cover the bottom and the sides of the Pyrex with a layer of the plantain dough, reserve


Step 2 (making the chicken filling)


Place a large sauté pan over medium heat, add ghee or fat of choice, once hot

Add onion, sauté stirring occasionally, until translucent, about 5 minutes

Add garlic, sauté stirring occasionally, until golden, about 5 minutes

Add the chicken breasts, sauté stirring occasionally, until pre-cook, about 10-15 minutes

Add tomato, black and green olives, cover the pan with the lid, allow the chicken to finish cooking, about 15-20 minutes

Add sea salt, cayenne pepper, stir well

Using a large spoon, break the cooked cubes of chicken breast into smaller pieces

Add heart of palms, stir well, bring to a boil

Add cilantro, stir well, remove from heat, reserve


Step 3 (preparing the chicken pie)


Evenly distribute the filling (step 2) over the green plantain dough (step 1)

Sprinkle with parmesan cheese (optional)

Transfer the Pyrex to a preheated oven (350 degrees F) for 10 minutes (optional)

Carefully, remove from the oven and serve


This is a delicious main dish to be server with a side of a crunch green salad and a vinaigrette sauce
