A Nutrient-Dense and Delicious Strawberries and Blueberries Mousse


Strawberries and Blueberries Mousse

Serve: 6-8


Preparation Time: 10-15 minutes

Boiling Time: 60 minutes

Total Time: 70-75 minutes


Ingredients (mousse) - 4 cups organic strawberries,hulled

- 1 cup organic blueberry

- 2 canella sticks

- 1 cup freshly squeezed orange juice (juice of 4 oranges)

- 2 packets organic stevia

- 3 tablespoons grass-fed unflavored beef gelatin (Great Lakes) (whipped cream)

- 1 cup grass-fed heavy whipping cream

- 1 tablespoon organic raw honey


Preparation

Step 1 (Simmering the fruits)

Wash well the strawberries and blueberries and transfer them to a medium saucepan

Add the orange juice, canella sticks, and stevia

Place the saucepan over medium heat, bring to boil

Reduce to low heat, let them simmer until the mixture reduces to half, 60 minutes


Step 2

Remove from heat, carefully transfer to a blender

Dissolve the gelatin powder in a ½ cup of orange juice or filtered water

Pour the dissolved gelatin into the blender

Carefully, pulse until well combined, 1-2 minutes


Step 3

Transfer to a serving bowl

Place into the fridge for at least 3 hours

Step 4 (how to whip cream)

· Bellow there are two important tips to do 30 minutes before preparing the whipped cream, to guarantee a good consistency:


1 - Place the mixing bowl and mixer beaters into the freezer, for at least 30 minutes prior to the whipped cream preparation

2 – Make sure that the heavy whipping cream is also into the fridge until the moment you start preparing this recipe


After cooled, remove the mixing bowl and mixer beaters from the freezer

Pour the heavy whipping cream into the cold bowl

Add the raw honey

Beat on medium speed until soft peaks form, about 3-5 minutes, reserve

(do not over-beat, it might turn to butter)


Step 4 (Serving)

Top the strawberry, blueberry mousse with the whipped cream

Decorate with raw blueberries
