Easy and Delicious Ratatouille Recipe – a nutrient-rich side dish

Serve: 4

Ingredients

(I used the vegetable combination below, but you can use four/five different colors of vegetables available in your refrigerator)

- 2 organic zucchinis, cut in half-circle slices

- 1 organic red pepper, large diced

- 1 organic yellow pepper, large diced

- 1 organic tomato, large diced

- 1 leek, sliced (I recommend using the whole plant, including the green part)

- 8 shitake mushrooms, halved

- ½ of a large onion, large diced

- Sea salt to taste

- Freshly ground black pepper (or cayenne) to taste

- Fresh cilantro (or your favorite herbs), finely chopped

- 4-5 tablespoons olive oil, or fat of choice

Preparation

In a large casserole heat the olive oil over medium heat

Add onions, stir well, cook 2-3 minutes

Add tomatoes, stir well, cook 2-3 minutes

Add zucchinis, stir well, cook 2-3 minutes

Add shitake mushrooms, cook 2-3 minutes

Add the leek and the red and yellow peppers, stir well

Add the sea salt and freshly grounded black pepper (or cayenne) to taste

Totally cover the casserole with the lid, cook 2-3 minutes (depending on how you like your veggies to be cooked – the more you cook, the less crunch they are)

Remove the lid, add fresh herbs, stir well

Transfer to a serve dish

Serve immediately

* Leftovers still nutritious and delicious to be consumed in the next day
