Simple and Delicious Roasted Leg of Lamb

Roasted Leg of Lamb

Serves: 8-10

Time Preparing: 10-15 minutes

Time Cooking: 140-160 minutes

Total Time: 150-165 minutes

Ingredients

- 4-5 pounds bone-in leg of lamb

- 4 tablespoons ghee, or fat of choice, melted

- 1 tablespoon coarse sea salt

- 1 tablespoon coarsely ground black pepper

Preparation

In a big bowl, coat lamb with half of the ghee (2 tablespoons)

Season with sea salt, and pepper

Preheat oven to 350 degrees

Transfer lamb to a roasting pan with fat up

Add the remaining 2 tablespoons ghee on the top

Roast until lamb is golden brown, 140-160 minutes

Remove from oven, and let it rest 10-15 minutes before carving

Transfer lamb to a carving board or platter, and cut into slices to serve

Gravy

The drippings in the pan can be used as a delicious gravy

Serve with “chimichurri tomato and cilantro sauce
