Green Plantain and Walnut Flour Bread - Paleo

Green Plantain (Plátano) and Walnut Flour Bread

Total Time: 70 minutes

Ingredients

- 1 cup walnut flour

- 2 green plantain, peeled and sliced

- ½ cup walnuts, crushed as wanted

- ½ cup coconut sugar

- 1 pinch sea salt

- 1 tablespoon baking soda

- 1 tablespoon cinnamon

- 1 pinch nutmeg

- ½ cup of butter – 1 stick, melted

- 1 cup coconut milk

- 3 pasture raised eggs

- 1 tablespoon vanilla extract

Preparation

Step 1

In a medium bowl combine walnut flour, walnuts crushed, coconut sugar, salt, baking soda, cinnamon, and nutmeg

Reserve

Step 2

Place in a blender coconut milk, eggs, butter, vanilla and green plantain

Beat until it is smoothie

Step 3

Combine the dry mixture and the blended mixture (Step 1 – Step 2)

Whisk well together

Step 4

Transfer the mixture to a greased cake pan of choice

Step 5

Preheat oven 350 to degrees

Bake for 45 minutes or until golden brown
