Cucumber Salad with Kefir or Yogurt

Preparation Time: 10-15 minutes

Ingredients

2 cucumbers peeled, diced

1 tomato, seeded and diced

3 tablespoons red onions, finely chopped

3 tablespoons fresh peppermint leaves, finely chopped

½ teaspoon sea salt

4 tablespoons fresh lemon juice

3 tablespoons olive oil

4 tablespoons goat kefir, or a natural Greek yogurt

Preparation

Place all the ingredients in a medium bowl and mix well to combine

Serve immediately
