Roasted Wild Salmon with Onions

Ingredients
1-pound Wild Salmon-Skin on or off
1 large onion, finely sliced
1 tablespoon coconut oil
¼ tablespoon sea salt
Black pepper to taste (optional)
6 Cilantro stems
Preparation
Wash the salmon and dry it with paper towel
Season the salmon with salt and pepper, reserve
Into an oven safe plate, mix the onions with ½ tablespoon of coconut oil, and salt to taste
Spread the seasoned onions into bottom of the baking dish
Place the seasoned salmon over this bed of onions
Place the cilantro stems over the salmon as wanted
Place the remain ½ tablespoon coconut oil on the top of salmon
Roast in 350 degrees for 30-40 minutes (depending if you want more or less roasted)
Serve immediately
