Chicken Soup

Ingredients
- 2 pounds chicken breast, cubed
- 2 tablespoon olive oil or fat of choice
- 1 sweet onion, chopped
- 8 garlic cloves, minced
- 8 springs of marjoram
- 8 sage leaves
- 1 big (Hannah) sweet potato, peeled and cubed
- 3 medium carrots, sliced
- 6 cups of water
- ½ tablespoon sea salt
- 1 tablespoon chopped fresh cilantro, for garnish
Preparation
Place a large pot over medium heat and add the olive oil
Add the onions, stir occasionally, and sauté it until is lightly brown (10 minutes)
Add the garlic, stir occasionally, and sauté it until it becomes golden brown (5 minutes)
Add the chicken breast, stir occasionally, and sauté it until is lightly brown (10 minutes)
Add the water, marjoram, sage, sweet potato and salt
Bring it to a boil, stir occasionally
Partly cover with the lid and cook for 30 minutes
Add the carrots and cook for 5 minutes
Serve immediately, garnished with cilantro
