Gluten & Sugar Free Delicious Coconut Cake

Coconut Cake

Serves: 8

Preparation Time: 15 to 20 minutes

Cooking Time: 60 minutes

Total Time: 75 to 80 minutes


- 1 ½ Tapioca flour

- 1 ½ Coconut flour

- 1 cup unsweetened shredded coconut

- ½ cup coconut sugar

- 1 ½ tablespoon baking soda

- 4 eggs

- 2 butter sticks

- 2 cups coconut milk

For the “Frosting” (optional)

- 2 cups coconut milk creamer

- 2 packets Stevia

- 1 tablespoons tapioca flour

- Coconut flakes to decorate

Preparation The Cake:

Preheat oven to 350 degrees

Grease a baking bowl with coconut fat and tapioca flour

In a bowl soften butter, about 3 minutes

Mix together the following ingredients as such

Add sugar to softened butter, mix for about 3 minutes

Add eggs, one at a time, to mixture, for 2 to 3 minutes

Add Tapioca flour and half of the coconut milk to the mixture

Add the coconut flour and the rest of the coconut milk, to the mixture

Add the baking soda, mix well Add at the end the shredded coconut and very gently mix

Transfer the mixture to the greased bowl

Bake for 60 minutes in the preheated oven


Place a small pan on a medium/low heat

Add the coconut creamer, Stevia and tapioca flour

Stirring frequently bring it to a boil

Pour evenly over the top of the cake

Sprinkle coconut flakes as wanted

Keep Refrigerated
