My favorite Roast Chicken Recipe
Time Preparing: 5-10 minutes
Time Roasting: 120 minutes
Total Time: 125-130 minutes
- One 3-t0 4- pound farm-raised chicken
- ½ teaspoon sea salt
- Freshly ground black pepper to taste
- 2-3 tablespoons ground cinnamon
- 1 tablespoon ghee or fat of choice
Preheat oven to 350 degrees F
Rinse the chicken and dry inside and outside with paper towel
Place in a big bowl, sprinkle evenly with sea salt and pepper all over the chicken, including the cavity
Using your hands, evenly spread ghee all over the chicken, including the cavity
Evenly sprinkle both sides of the chicken with ground cinnamon
Place the chicken on a roasting pancovered with parchment paper
Roast until golden, 100-120 minutes
Remove from oven
Transfer to a serving plate
Let it rest 10 minutes before serving
This is a simple, fast to prepare and delicious recipe that makes my home “smells” like Christmas time.
I serve this dish with mashed potatoes or mashed cassava or mashed sweet potatoes. Plus, a large salad with mixed green leaves, walnuts and dried cranberries, seasoned with a vinaigrette dressing.
Keep leftovers in the refrigerator for 2-3 days and use in sandwiches or have at hand for a quick meal.
Every time you prepare this dish try your own version using different herbs and spices available to you. Be the alchemist in your kitchen.
The herbs I already used with great results are rosemary, fresh sage or fresh marjoram chopped. Also, I loved a combination of ground turmeric, ginger and cayenne. But I often roast a chicken using only sea salt and ghee. All are delicious and simple to prepare options.
