Decicious Gluten / Dairy-Free Cake Roll with Red Fruit Jam and Dark Chocolate Top - Paleo

Gluten / Dairy-Free Cake Roll with Red Fruit Jam, and Dark Chocolate Top - Paleo-AIP

Serve: 6 slices

 

Time Preparing: 15-20 minutes (the dough and the top)

Preparation Time: 60-90 minutes (the filling)

 

Ingredients (dough)

- 8 pasture-raised eggs, separated

- 3 tablespoons coconut sugar

- 2 tablespoons almond flour

- 1 tablespoon potato flour

- 1 tablespoon rice flour

 

Ingredients (filling)

- 4 cups clean organic strawberries

- 1 cup organic blueberry

- 1 cup organic raspberry

- 1 cup fresh orange juice

- 2 packages Stevia

- 1 teaspoon coconut fat

 

Ingredients (top)

- 8-10 ounces dark chocolate (70 percent)

 

Preparation (filling)

I use this red fruit jam recipe as filling (recipe here)

Comments:

 1 - To spread the jam easily in the cake, I recommend blending 1 cup of red fruit jam 30 seconds

2 – Prepare the red fruits jam one day prior to the cake roll preparation or use any filling you want

 

Preparation (dough)

Step 1

Preheat oven to 350 degrees Fahrenheit

 

Step 2

To make it easier removing the dough from the baking pan 

Lightly grease a large rectangular shaped baking sheet pan with coconut fat

Line parchment paper on the bottom of the greased baking pan

Lightly grease the top of the parchment paper with coconut fat, reserve

 

Third step

In a small bowl combine the almond, potato and rice flour, stir and reserve

 

Fourth step

In a medium bowl add the egg whites

Using an electric mixer, beat the egg whites until form peaks, 2-3 minutes

Gradually add egg yolks, one by one, beat until smooth and blended, 2-3 minutes

Add coconut sugar, beat until smooth, 2-3 minutes

Gradually add the flours (third step), beat until batter is smooth and blended 

Pour the batter into greased baking pan spreading to the corners 

Bake for 8-10 minutes, or until a toothpick inserted in center comes out clean.

 

Fifth Step

Carefully, remove cake from oven

Immediately invert the cake onto a humid tea towel with parchment paper facing up

Remove the parchment paper carefully so that the dough does not break
Spread the red fruit jam over the cake

Roll up the cake with the help of the tea towel carefully to not break

Transfer to serving plate

 

Top

Roughly chop the dark chocolate into small pieces

Place chocolate in heat-proof bowl

Place bowl over a saucepan of hot water (1-inch water)

Stir the chocolate occasionally until completely melted

Carefully remove bowl from heat 

Pour the chocolate over the cake roll top, spreading it completely

 

Cool and serve decorated with fruit as deserved
