Delicious Cocoa Waffle with Almond Flour Gluten, Dairy, Sugar-Free - (to Dear Emilia)

Cocoa Waffle with Almond Flour

Serve: 2

 

Time Preparing: 20-25 minutes

Time Cooking: 5-10 minutes

Total Time: 20-25 minutes

 

Ingredients

- 4 tablespoons organic almond flour

- 1 tablespoon organic cocoa powder

- 1 tablespoon organic coconut sugar

- 2 pasture raised eggs – separated egg whites from yolk

- 1 tablespoon organic vanilla extract

- 1 tablespoon organic coconut oil

- ¼ teaspoon baking powder

- 1 pinch sea salt

 

Preparation

Step 1

In a small bowl combine the almond flour, cocoa powder, and coconut sugar, stir until well combined, reserve

 

Step 2

In a small bowl, using an electrical hand mixer, whisk egg whites until stiff peaks form, 2-3 minutes

Add egg yolks, whisk 2-3 minutes

Start pouring the dry ingredients into the eggs (from Step 1), whisk until combined, 2-3 minutes

Add vanilla, coconut oil, and sea salt, whisk until combined, 1-2 minutes

Add baking powder and using a spoon gently stir until combined

 

Step 3

Preheat waffle maker, brush with coconut oil if needed, and spoon mix onto the center of waffle maker (follow specific manufacturer recommendations on how to preheat waffle machine and how much mix you can use in your specific waffle machine )

Close the lid and bake until waffle is golden brown, 4-5 minutes

Cut in pieces 

Serve with fruits, yogurt, or topped with pasture raised butter (if you are dairy tolerant)
