Chicken Liver “Alla Veneziana”

Ingredients
- 1-pound fresh chicken liver (or beef liver), cut in slices
- 2 tablespoon ghee or fat of choice
- 2 large onions, finely chopped
- 6 Sage leaves, finely chopped
- 2 tablespoons cilantro, chopped
- ½ teaspoon sea salt
- Fresh ground pepper (optional)
Preparation
Heat a large skillet over medium heat with ghee
Add the onions, stir well, and sauté for 5 minutes, stirring occasionaly
Add sage, stir well, and sauté for 5 minutes, stirring occasionally
Spread this mixture evenly in the bottom of the skillet and place the liver over it, without stirring together, sauté for 5 minutes
Then, stir well the liver with the onions, add the salt and pepper, sauté until liver is golden brown, 5-10 minutes
Garnishe with cilantro
Serve warm
